Chilled Avocado and Bean Soup

(serves 4)

2 large ripe avocados
2 tbsp fresh lemon juice
1 slightly rounded tsp salt
1 garlic clove, peeled and crushed
275ml cold chicken stock
275ml cold water
3 tbsp Juniper Green Organic Gin
6 level tbsp cooked green beans or sugar snap peas
white pepper to taste

Method
Put avocado, lemon juice, salt and pepper, garlic, stock and water into liquidiser. Blend until smooth, refrigerate for several hours until thoroughly chilled. Before serving, stir in Juniper Green Organic Gin, beans and season to taste.
