Red Pepper, Tomato and Gin Sauce – Ideal with Pasta

2 large red peppers, finely chopped
1 large onion, finely chopped
1 medium can of chopped tomatoes, or 750g fresh tomatoes if you prefer
2 cloves of garlic
3 tbsp of virgin olive oil
300g crème fraiche
salt and pepper to taste
150ml Juniper Green Organic Gin

Method
Fry peppers, onion and garlic in the olive oil until transparent, add tomatoes and cook for approx 15 minutes. Add crème fraiche and Juniper Green Organic Gin, bring back to the boil and season with salt and pepper. For smoother finish liquidise in liquidiser. Ideal served with Penne pasta and a green salad.
